Here’s a simple recipe for turkey curry that you can try ..


2 tablespoons vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper

1 can (14 oz) coconut milk

1 cup chicken or turkey broth

2 cups leftover cooked turkey, chopped

1 red bell pepper, seeded and chopped

1 green bell pepper, seeded and chopped

1/2 cup frozen peas

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish


Heat the vegetable oil in a large saucepan or Dutch oven over medium-high heat.

Add the onion and cook for 2-3 minutes until it begins to soften.

Add the garlic and ginger and cook for another minute.

Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for 1-2 minutes until fragrant.

Pour in the coconut milk and chicken or turkey broth and bring the mixture to a simmer.

Add the chopped turkey and bell peppers and continue to simmer for 10-15 minutes until the peppers are tender.

Stir in the frozen peas and cook for another 2-3 minutes until heated through.

Season with salt and pepper to taste.

Garnish with fresh cilantro before serving.
